It is fall, which is officially sweater and soup weather. A bowl of warm and nutritious soup on a cold winter day is the perfect meal both for adults and kids. Soups do not have to be bland and can have a flavorful mix of a variety of vegetables, pastas, and grains.
One such vegetable is broccoli, which has a bad reputation with kids, but is packed with antioxidants and Vitamins K and C.
According to the USDA National Nutrient Database, one cup of chopped raw broccoli (approximately 91 grams) contains 31 calories, 0 grams of fat, 6 grams of carbohydrate (including 2 grams of sugar and 2 grams of fiber) and 3 grams of protein.
Try this easy vegan broccoli soup, which you can make with almond milk or coconut milk or a blend of the two.
Ingredients:
- 1 large broccoli
- Water, approximately 1 cup
- Small piece of ginger, grated or finely chopped
- 3 tbsp of coconut milk
- ½ a cup of almond milk
- Salt and pepper
- Fresh dill
Instructions:
- Cut broccoli into small cubes.
- Place the broccoli in a pot of water with the ginger and salt and boil.
- Once the broccoli is tender, stir to blend it with the ginger and salt.
- Mix the almond milk and coconut milk together and add to the broccoli mixture to get a smooth consistency
- Garnish with fresh dill. Serve hot. A delicious and nutritious cup of soup is the answer to warming you up!
